Pack the cooled onions into 4 sterilized canning jars (see note below), leaving 1/2 inch of headspace at the top of each jar. 5. Carefully peel the eggs and place them in the jars on top of the onions, dividing them evenly among the jars. Cover with sterilized lids and rings and refrigerate for at least 2 days before serving. The pickled onions will keep in your refrigerator for up to 2 months.

Pour the mixture into an 8x8 inch baking dish or casserole dish that has been coated with cooking spray. Refrigerate for at least 4 hours or overnight. Cut into squares and serve chilled.
